Planning and prepping

I have been trying to be more productive with my days since having Jake. So I wrote a big grocery list for Costco and the grocery store, so I don't have to make a lot of trips during the week. Plus it is over 100 degrees in California right now so I really don't want to be put if I don't have to be. anyhow... I also want to be a better time manager when it comes to prepping meals so today I had some free time so I peeled and boiled potatoes for potato salad for tomorrows dinner, boiled chilies for salsa and organized the cabinet where the pots and pans were while they cooked. so I have salsa ready to be made (tomorrow) and potato salad I will make in a minute when the potatoes are all cool. I think this is good because now i did it while I was in the mood and wont make a excuse for not doing it tomorrow. Tomorrow I want to take my planning to a new level and do some baking all at once we want to make some lemon bites we saw Paula Deen make, I want to make some chocolate chip cookies my friend Lynette makes, and some brownies, all can be frozen for later in the week so we can homemade snacks. so this is all great for my time but not the waste line... hmmmm will work on that another time :0)
here is how I make my potato salad, if you have a good recipe please share I love potato salad:
Raquel's Potato Salad
6-8 large potatoes (boiled, peeled, and cubed)
4-6 boiled eggs (peeled and chopped)
2 celery stalks finely chopped
1 can olives chopped
3 large pickles chopped
add all ingredients to a large bowl then add
mayonnaise
mustard
a little ranch dip mix
garlic salt
pepper
top with paprika and voila!!!

  1. My question is, how do you know when the potatoes are done for the salad? I am afraid of getting them too done and mushy or not done enough.
    I think I will try out your recipe.
