Coconut Balls

Sarah over at Short Stop is hosting a Christmas cookie recipe exchange. i have hosted a annual cookie exchange here at my home every year and every year i am asked to make these coconut balls they are SO yummy. my husbands grandma used to make these, and his mom and now i do. i love recipes that are passed down in the family i am sure they remind Johnnie of his grandma Lilly every time he has one and although they are not a cookie but a candy they are so yummy. i make this a double batch and it makes TONS (like way over a hundred) of the candy. Here goes:

1 can sweetened condensed milk
1 cup softened (NOT melted) butter
1 tsp vanilla
1 cup chopped walnuts
1 small bag of sweetened coconut
2 1 pound boxes of powdered sugar
  • mix all ingredients in a large bowl.
  • once mixed scoop into small ball shapes (i use my small pampered chef cookie scoop)
  • once you have them all in balls pop into the fridge or freezer until ready to use. you can do this step a few days before if you would like







In double boiler melt a bag of chocolate chips and one stick of paraffin wax (usually the box has four)
once melted dip each piece of candy in the chocolate and then place on waxed paper until dry





once they are dry put them in candy wrappers if you would like and set up on a tray.
my friend Jennifer loves these frozen but you decide how you want them frozen, from the fridge (my favorite), or room temp.
